The shaft is the cylindrical component that connects the motor housing to the blade, or to the attachment, of an immersion blender: it houses the drive spindle that rotates whatever is fitted at the end. It is usually detachable, made of stainless steel, and determines the maximum working depth allowed.
A detachable shaft separates the food-contact part from the motor housing, making cleaning and sanitising between preparations easier without having to take the whole appliance apart.
For professional use, typical shaft length ranges from 300 to 500 mm, in AISI 304 stainless steel, or AISI 316L on models intended for more corrosive processing. A seal on the motor side prevents liquid ingress within the stated immersion level.
Shaft failure from liquid ingress is the most commonly reported fault among users of professional immersion blenders. The mechanism is straightforward: the seal holds up to the immersion level stated by the manufacturer, shown on the model’s label; beyond that level, liquid reaches the bearing housing and the motor.
The damage is often progressive: an early intermittent fault typically precedes permanent failure, so respecting the stated level avoids unnecessary replacement costs.
As a component in direct contact with food, the shaft complies with EC Regulation 1935/2004 on materials in contact with food; the appliance as a whole meets technical standard EN 60335-1 for electromechanical safety.
For HACCP purposes, periodically detaching the shaft is necessary to fully sanitise the inside of the blade housing, which isn’t reachable through external cleaning alone.
BianchiPro selects professional immersion blenders with a detachable stainless steel shaft, for gelato shops, pastry labs and restaurants.

The most common cause is liquid ingress beyond the maximum immersion level stated by the manufacturer, which progressively damages the bearing housing and the motor. Typically AISI 304 stainless steel, or AISI 316L on models for more corrosive processing, with a standard length between 300 and 500 mm. Yes, on most professional models it is detachable from the motor housing, allowing separate and more thorough sanitising. Generally between 300 and 500 mm, depending on the depth of the working containers used in professional kitchens.+ What is the shaft of an immersion blender?
