It is a device designed for the rapid and even cooking or simple heating of a wide range of foods, utilizing heat generated by electric elements and transferred through contact surfaces.

Structure and Operation

Typically, a professional electric contact grill consists of two opposing heating surfaces (plates):

  • A fixed bottom plate (base).
  • A movable and usually balanced or self-balancing top plate, which can be lowered to make direct contact with the food.

This "sandwich" configuration allows heat to be applied to both sides of the product simultaneously, ensuring reduced cooking times and uniform results. Operation relies on controlled heating (via a thermostat) of the plates to the desired temperature to effectively cook or heat items such as paninis, toast, burgers, meat, thin fish, and vegetables.

Types of Surfaces and Materials

Surface Type:

  • Smooth Plates: Offer full and uniform contact with the food. Ideal for toasting bread, cooking eggs, delicate vegetables, or any product requiring an even heat surface. They facilitate easier cleaning.
  • Ribbed Plates: Feature grooves that impart the classic "grill marks" to foods like filled sandwiches, meat, or vegetables. The ribs also help drain away excess fat during cooking.
  • Mixed Plates (one smooth, one ribbed): Offer greater flexibility by combining the advantages of both surface types.

Plate Material:

  • Cast Iron: A traditional material ensuring excellent heat retention (holds heat for a long time) and robustness. Ideal for intense and continuous cooking, but requires proper maintenance to prevent rust.
  • Stainless Steel: Robust, corrosion-resistant, and relatively easy to clean. Offers good cooking performance.
  • Glass Ceramic: A modern material distinguished by its rapid heating speed and maximum ease of cleaning. It's ideal for fast service and for cooking that doesn't require the thermal inertia of cast iron. It is less porous and does not absorb odours.
