Two-handed cheese knife ideal for cutting large wheels of cheese, thanks to the two handles that allow for even pressure over the entire cutting length.

The blades are forged from the finest molybdenum-vanadium steel alloy, and the blades are all sharpened by hand for a perfect cut and virtually unlimited durability.

BLADE WITH TREATMENT: ICE TEMPERING

Ice tempering is an innovative heat treatment that allows the hardness of the blades to be increased by about 1.5-2.0 HRC, this treatment ensures a more compact steel structure and greater cutting strength. Knives treated with this technique are visually easily identifiable, as the blades are polished "to a mirror finish."
